Fair Portions Restaurant & Catering
Episode 115: Spencer Wallace Serves Up Fresh Flavor at Fair Portions Restaurant & Catering
What happens when a love for cooking, a heart for people, and a really good biscuit come together? In Episode 115 of the Get ’N’ Your Business Podcast, host Alison Shores of the Camden County Chamber of Commerce sits down with Spencer Wallace, owner of Fair Portions Restaurant & Catering, to talk about his journey to Camden County, how cooking became a passion, and what he hopes to bring to the community through food.
And yes—we definitely have to talk about those biscuits.
From the Basketball Court to the Kitchen
Spencer’s story didn’t begin in a restaurant. Originally from the Atlanta area, he attended college on a basketball scholarship before beginning a career in retail.
He eventually made his way to St. Marys in 2007 and has called Camden County home ever since. His love for cooking goes back even further. Growing up as the youngest of five boys, Spencer spent time in the kitchen with his mother, learning techniques and developing an appreciation for preparing food. When he went to college, he began cooking for friends and teammates.Instead of feeling like work, cooking became something different. For Spencer, it became a form of relaxation, creativity, and even therapy.
The Art of Making Food Your Own
One of the themes Spencer shares throughout the conversation is that great cooking is about more than simply following a recipe.
It’s about understanding ingredients, experimenting with herbs and spices, finding combinations that work, and creating your own flavor.
That philosophy carries directly into what customers experience at Fair Portions Restaurant & Catering.
Spencer emphasizes keeping food fresh, rotating what he prepares, and giving customers a meal they’ll remember.
Yes, You Can Get the Biscuits All Day
If you’ve heard people around Camden County talking about the biscuits at Fair Portions, you’re not alone.
They’ve quickly become one of the restaurant’s most talked-about items—and Spencer confirmed something biscuit fans will definitely appreciate:
The biscuits are available all day.
Breakfast options discussed during the episode include sausage, egg and cheese biscuits; bacon, egg and cheese biscuits; fried chicken biscuits; pork chop biscuits; gravy; and grits.
But Fair Portions goes well beyond breakfast.

Catering customized around the customer or event
Spencer says one of his priorities is keeping food fresh rather than preparing large amounts that may sit around.
That also means customers can call ahead when they know what they want, giving the kitchen time to have a freshly prepared order ready.
Catering Built Around Your Event
Fair Portions isn’t just a restaurant.
Spencer also offers catering for events, businesses, organizations, parties and other gatherings.
Instead of limiting customers to one standard catering menu, Spencer works with them to determine what they’re looking for and what makes sense for the occasion.
He has previously provided food for local medical offices and other groups, and during the episode he talks about catering possibilities ranging from parties and football gatherings to wings and customized meals.
More Than Food—It’s About People
One of the strongest themes throughout Spencer’s conversation with Alison is his appreciation for people.
He talks about customers coming from different parts of Camden County—sometimes specifically because they heard about the biscuits—and how much he enjoys meeting them.
He also shares his desire to find ways to recognize people who serve the community, including teachers, nurses, firefighters, military members and others.
For Spencer, Fair Portions is about more than selling a meal.
It’s about creating a personal connection and becoming a place Camden County residents can turn to when they want a fresh meal without having to prepare everything themselves.
